Well not really.....all that bringing on has brought me a throat that feels like a prickly cactus is breeding super fast there...
But well, it's summer, and I got a free tinned can of pineapple, and I spied cream cheese.....and one thing led to another, and that's how life began...(er....wellll...)
Anyway so I scouted the web for a good cupcake recipe, but I got distracted by some really yummy things and pics, so, when I started in the kitchen with the can of fruit, I was still without any particular recipe or direction(The story has a happy ending.....really...)
So I did what I do best, dumped a stick of butter in sugar, and let my cupcake monster personality take over. I even have a crazy laugh....well it sounds like "wheeeeeeeeeeee", and I maintain it has nothing to do with the sugar rush...!!!
Here's how it went...
(Recipe for 12 cupcakes)
Half a cup of sugar needs half a cup of butter to tango....
An egg, a tablespoon of pureed pineapple, a drop of vanilla essence(that's all that I had left), and 1/2 teaspoon pineapple essence ...
Whip it for a bit until mixed, dont over do it....
Now take a cup of flour, add 1/4th tsp baking powder and a teensy bit more, like 1/16th teaspoon if you insist on measuring it, and a tiny pinch of baking soda for luck(or for all the citruses you'll end up adding)....
Alternate mixing the flour mixture with half a cup of milk(dry-wet-dry), suddenly lose focus and let a teaspoon or 2 of the can syrup find its way in, and blend it all....
Chop up a handful of pineapple pieces(about half a cup) and stir 'em into the mix...don't let your mind wander towards pina coladas, or you'll end up stirring half a cup of fresh grated coconut into it, like me....(on second thoughts wander all you like, coz coconut gives this cupcake that unbelievable moistness)
So now dump it into a cupcake tray, and let those little babies rise.....like I said, life begins here....
Top it with butter cream or cream cheese frosting, or just eat 'em without any frosting, I prefer them without any frosting......yummm......
I'm gonna dream me a little cupcake dream
Of sugar and frosting and a little magic weeeeaveeeee....
Ahem....I think I need to talk to the cupcake monster.....you go ahead and make these mindbogglingly delicious cupcakes....
